Almost guilt free....and can easily be made school friendly!

I love baked goods. I consider them my number one nemesis. Which is why I am always on the lookout for recipes that I can tweak. These turned out quite fluffy - and would work with any gluten free flour! They are quick and easy to make, and best part, #kidapproved.

Spice Cookies

10 ingredients · 25 minutes · 12 servings


1/2 cup Pitted Dates

1/4 cup Coconut Oil

1 Egg

1 tsp Vanilla Extract

1/2 cup Millet Flour

1/2 cup Almond Flour

1 1/2 tsps Cinnamon

1/2 tsp Ground Ginger

1/2 tsp Baking Soda

1/4 tsp Sea Salt


1. Preheat over to 350°F and prepare a baking sheet with parchment paper

2. In your food processor, add dates, oil, egg and vanilla. Process into a puree. Add

remaining ingredients until combined.

3. Drop cookies by tablespoon full onto prepared cookie sheet - lightly press down with a

wet fingertip.

4. Bake for 10 minutes, until edges are lightly browned. Remove from oven and let cool on

cookie sheet for additional 10 minutes before transferring to a plate.


Alternative Flours

You could you any non-gluten flour - sorghum, buckwheat, chickpea, black bean, tiger nut,

etc. Experiment. (If you want to use coconut, you may have to reduce your flour amount)
