Carrot Cake Muffins

I have a hard time with planning breakfasts for The Management team. They only like eggs or steel cut oats so many days a week. Every Sunday I try to make a batch of healthy breakfast muffins. These are a new one I've tried this week. They're #glutenfree and use the healthy #MCT oil for fat. 4g of protein per muffin and only 1g of sugar! They're also a way I can get a 3 and 6 year old to eat some form of vegetable every meal; fibre, antioxidants, Vitamin A, C & K. Plus I get to use my fancy cinnamons! Having the kids help make them (feeding carrots into the food processor for shredding, measuring and mixing ingredients), you're more likely to get them to try the new foods that you make. These were an easy sell. Try them out and tell me what you think.
