The prolonged cooking of bones in water results in a broth rich in nutritional constituents that promote strength, tonify the blood, nourishes us in times of sickness and rehabilitation, and helps to prevent bone and connective tissue disorders. Good bones will make good broth!

Do you have special tips and tricks?? I took one from Love Olive Yourself Holistic Nutrition and I now add some egg shell for extra nutrients.
I saw on an Alton Brown post to deeply brown your onions before adding them (so I'll try that next!).
My tip is to keep everything in a bag in the freezer until you're ready - your carcass/bones, veggie and herb scraps. And make sure to put a little acid in to help the good minerals leach from the bone! I usually slow cook overnight and most of the next day. When it cools, the jigglier the better!
